Raw sauerkraut is process called lacto-fermentation. We can ferment cabbage thanks to the good bacteria that naturally exist on the surface of the cabbage leaves (and many other veggies too). Food becomes fermented when the “good” lactobacilli bacteria convert their sugars and starches into lactic acid.
